We love Chambourcin for exactly the reasons it's underrated: deep pigment, bright acid, and a fruit profile that has strong strawberry jolly rancher vibes. It also happens to be a hybrid grape that can be farmed with less interventions in the vineyard which we love and support when we can. This is 100% Chambourcin made in the méthode ancestrale — the fermentation finishes in the bottle, so the bubbles are the wine's own and the CO2 is soft and foamy rather than sharp.
This one pours a loud pink. Smells and tastes like crushed strawberries and hard candy. Tastes like it should be sweet but is completely dry, tart, and refreshing, with a zippy finish that resets your palate every sip. The best part is it's low ABV which makes this a porch pounder.
This was hand disgorged, a small amount of sediment is to be expected. Serve icy cold.
