Our 2025 Sparkling Pét Nat Chenin Blanc is quite possibly our favorite wine we have made to date. We received some beautiful Chenin Blanc from Beacon Tree vineyards in Keswick, VA and sent it straight to the press after some light sorting. It fermented in stainless steel with native yeast and had zero additions of any kind (including sulfur). We bottled it a la methode ancestral which is to say we bottled it before fermentation finished. After about 9 months of lees aging in bottle (aka aging on the yeast and sediment in the bottle) we hand disgorged it. It is super fresh and zippy, we get pineapple, lemon zest, and a sunny 70F day with a cool breeze.
